Hey! We are looking for a few good (or aspiring to be good) cooks to share your favorite recipes. Please feel free to post in Forum Soup. If we get a lot of response to this, the Godfather might bless us with our own room.

OK, here is one of my personal creations. Everyone that has tasted, tries to convince me to enter in baking contests. All of those serious sweet tooths out there, should appreciate, here it is:
I call it "Magic Shell Upside-Down Cake"
Take two regular pan cakes (round or square) of flavor of your choosing, I recommend plaing white or chocolate cake.
In between them, use spread consisting of whipped cream (hand whipped highly recommended), bananas and strawberries.
*note- also can use vanilla pudding for richer taste in place of whipped cream*
Spread Whipped cream over whole thing, and empty a full bottle of magic shell over entire cake. - Spread spuratically, to give marble look to cake.
Put entire cake in freezer for at least an hour.
Remove and serve - Watch as people eat in amazing delight!!!!!!!!!
ooops, meant plain not plaing. Haven't heard of that flavor before. Ha ha ha!

Pasta, garlic bread, and a green salad.
Okay, to start I do have a pasta machine and it is a bonus if you make your own fresh pasta for this little dish. I am a bit of a fan of Italian cuisine. But, and this is a long story that I won't get into here--I prefer the Italian cuisine in California to that of the Italian cuisine served in Italy.
I spent three weeks in Italy in 97 and have been there twice prior to that in recent years, so I think I have a right to make my rather pointed observations. I know, I know, maybe I didn't eat at the right places, etc...BS, I tried them all from the cozy trattorias to the high priced, ritzy ones. California Italian cuisine is simply superior.
Now back to the recipe. Sorry, I guess I lied in saying I wouldn't get into the story but Hey, it's my story! And I could have made it MUCH longer.
Fresh spinach fettucini w/ pesto sauce. I like only walnuts for the pesto--it makes it milder. For a bit of a sharper taste use only pine nuts or vary it to half pine and half walnuts. Fresh Parmesan and Romano--both grated are also key for this recipe. And don't be cheap on the olive oil--live a little and spend a sheckel or two. Fresh basil leaves--I grow my own, but store-bought will do perfectly fine. Now for all the actual amounts--I will report back tomorrow as they are stored in my home pc and not accessible from this one. Not that anyone will likely notice until tomorrow anyway.
The rest of the meal deserves a salad with only red leaf lettuce, tomatoes, green onions, and one whole avocado. Again, don't scrimp on this key ingredient. Balsamic vinegar and that same good quality olive oil with plenty of coarse black pepper. A pinch of garlic salt and toss away. Anyone who dares ruining this fine meal with iceberg lettuce gets what they deserve!
Next garlic bread with mozzarella cheese-sliced in a 375 degree oven for approx 10 min. DO NOT let the cheese get browned. Spread butter on individual slices of bread and then PRESS garlic cloves directly onto each slice. Cheese slices on top. One good size clove will go fine for two pieces. More for the adventuresome (I am one). Live on the edge.
Now for the wine. A Merlot will due nicely. I will go with PB's recommendation of a Clos Du Val Merlot. I prefer a Cab, generally, but these days I have more Merlots because my girlfriend prefers them. Cab--a good, low cost suggestion is a Robert Mondavi Coastal Cab. If you want to go all out, and why cut corners with this fine meal, I would then recommend virtually any of the many available Hess Select Vintages.
For dessert--you don't need one after this fat-fest. Go for a walk instead. Or drink more wine to assist in the digestive process of this rather carbohydrate-heavy little treat. Enjoy. This is my favorite.
Would others care to suggest additional recommendations on various Cabs of choice? Or even other modifications to what I deem a near-perfect meal? Fire away.

For good tortelloni:
1. Go to Costco
2. Buy it bagged
3. Throw in pot and cook
4. Put little generic package of seasoning in the mix
5. Eat!

My fresh Pesto recipe as promised:
2 cups fresh basil leaves
4 peeled and chopped large garlic cloves
1 cup shelled walnuts or pinenuts
1 cup good quality olive oil
1 cup freshly grated parmesan cheese
1/3 cup freshly grated romano cheese
1 hefty pinch of salt
1 hefty pinch of pepper
combine basil, garlic, and walnuts in the bowl of a blender/food processor. With the motor running, pour the olive oil in slowly.
Turn off the motor and add cheses, salt, and pepper. Done! Makes 2 cups.
I double this recipe and this freeze smaller portions in little ziplock bags. It will last over a year in the freezer. Enjoy!

1 Frozen Pizza
Heat oven to 400F and cook for 15 minutes.
EAT.
and Second
Needed:
$2.48 and some gas.
Drive to Chico's Tacos, order Bean/Cheese Burritto (no sauce)
EAT...

I am seeing that there is Recipes being put on and do I have one for you. It is an recipe that you can use at work or home if you have a Microwave or Toaster Oven (At my job I have both.)
Raven's Pizza Quicks
you need
Sourdough english muffin (or regular)I get the medium soft and keep it cheap.
Favorite spaghetti Sauce (I use prego extra Garlic)
Cheese (Jack, Cheddar or Motzarella) Perferable The best melting Cheese
Asorted Toppings ( pepperoni, ham, onion, tomamto, or none if cheese is what you want)
The amount of ingredents depends on home much is made. These are also greet fo parties especially if you have it laid out on a table with a small toaster oven.
First Cut your muffin in half. ( I perfer soughdough cause it cooks and taste like pizza Crust. Though normal is just as good)
Take spoon and smear about 2tbsp. of Sauce on each of them and spread evenly.
Then Take cheese and put as much as you want (*reminder the more cheese the longer the cook time)
The next step is optional it is covering the quick with topings ( Raven's uses Pepperoni found in the groceries next to salami)
Well then pop it in to toaster oven at 350 degrees (or reg oven at same temp.)Microwave about 1 minute to 1min 30secs.
When cheese is bubbling or full melted remove and eat.
Enjoy the Pizza Quicks

This is so good and so easy.
Easy Chicken Recipe
It is best to use boneless, skinless chicken breasts. You can bake as many as you can fit in 9x13 pan.
Wash chicken breasts; salt, pepper, and garlic to taste. Dot pan with butter and place chicken on butter.
Mix in bowl:
1 can cream of chicken soup
1 can cream of celery soup
1 c. sherry wine
1 c. sour cream
Pour mixture over chicken and sprinkle with lots of paprika.
Bake at 350 for one and a half hours.
Enjoy!
Buffy's variation - I have also added white rice to the bottom of the pan. The soup soaks it up and makes a wonderful rice dish to go along with the chicken.
Buffy-- That sounds good! And easy! Do you cook the rice before put it in or just put it in?
P.S. Dare I even ask what the fat & calorie content of the meal is?

Thank you for bringing that to my attention. You use raw rice at the bottom of the pan.
As far as the calorie content is concerned -- you can control that. Campbell's puts out soups that are 98% fat free and you can use non-fat or low-fat sour cream as well.
Also, the recipe suggests that you dot the pan with butter. I have never done this and it always turns out well.
If you do all that, the fat factor isn't that bad. However, I am a firm believer that the more fat and calories that are in a dish, the better it is. Yum!

Despite the Irish slant on my name, I too know a bit of the Italian cuisine.
Now back up here a bit -- Sam...., I may call you Sam....? Anyhow, I see no real difference between your green pesto and that of most northern Italian communities.
Please elaborate.
Do you happen to have a recipe for Tripe preferably with a red sauce and taters?

Just a suggestion and feel free to ignore it, but, it might be good to post each new recipe to a new topic. That way someone can look at the list of topics to see what recipes might be in here.
There's more than a half-dozen recipes in this thread that someone might miss if they didn't notice the generic "cuisine" topic title.
