If you want to fly combat you can't go wrong with CFS3. It's WWII era sim with a few planes thrown in that were coming out at the end of the war that are fun to fly.

I haven't flown any modern combat flight sims lately, but LOMAC (http://www.lo-mac.com/) looks really good. There's a demo you can download there, but I haven't tried it yet.

If you want to fly boring civilian planes, or buzz busy control towers with 747's get MS Flight Sim 2004. ;) Oh, flying down the main strip in Vegas at night with a Cessna 172 is fun too. ;)

Jane's WW2 fighters is a pretty good sim.

I hear good things about the Microshaft Flight Sim series.
